Selecting Meat for Your Summer BBQ

By Lewis Tosh

Meats for Grilling

When the sun is shining, everyone feels encouraged to get outside and enjoy it, but when tummies start to rumble and lunch is nearing who wants to go back inside to the kitchen?! Thankfully almost everybody owns a BBQ these days and summer get-togethers have become some-what of a tradition in most families.

Obviously if you are planning on having a BBQ you need meat, and the variety of choice available is huge! So it's time to put away the casserole beef and pork roasts and talk about fun summer easy to BBQ meats.

Burgers

The first thing that springs to mind when someone mentions BBQ is... burger! One is not complete without the other so be sure to have fresh burger patties ready for your grilling get-together.

For something a little different, attempt a mixed meat patty recipe, simply mix ground beef and pork together with salt pepper and egg and you have a moist, flavorful patty ready to throw on the grill. If you are running short of time order some delicious hand-picked gourmet Angus beef patties from an online butcher, they will deliver your order fresh to your door, saving you time.

Sausages and Hot Dogs

Known as hot dogs or sausages, these are a great addition to any barbeque. Easy to cook, affordable and loved by all, there's no reason not to throw a few sausages in the shopping cart when you plan for a BBQ.

Sausages can be made from any meat: beef, chicken, turkey, pork... And they can be stuffed and seasoned with almost anything. The variety available is astounding, and while many consider them to be modest meat products, there are many varieties that push sausages into the gourmet meat category.

Poultry

Chicken is extremely versatile and makes for a great addition to a summer BBQ. There are a variety of cuts, dry rubs and marinades you can use for chicken, and it's always delicious. It's also affordable, making this a great option for feeding a big group.

You can buy chicken pieces in bulk from any butcher, they're relatively inexpensive and are particularly quick and easy to cook. Simply defrost and toss on the grill, then serve with dipping sauces such as sweet Thai chili or honey mustard. There are many butchers that now sell organic and corn fed chicken so don't forget to give that a go too.

Steak

Grilling up a steak makes for a great meal--though you might want to save this one for special dinners with family or a few friends instead of inviting the whole neighbourhood over. Not only are good steaks a little pricey, but they take some time to grill right.

Although cooking steak doesn't require any fancy preparation, or carefully guarded sauce recipes, certain guidelines have to be followed. The truth is, though, that even experienced cooks can have trouble cooking a perfect steak. Aim to leave your steak out of the refrigerator before cooking, which allows it to reach room temperature and always cook on a searing hot grill. Cooking times will vary depending on how well done the recipient likes their steak so always be sure to ask first!
