Dark Chocolate Truffles - A Sweet And East Treat To Make

By Shannon Reeves

Dark chocolate truffles are beautiful to look at, exceptionally delicious and deceptively easy to make. You've just got to make sure you start with high quality cocoa and make sure you do not over heat the mixture and you will be well on your way to enjoying a fabulous treat.

Simply, truffles start with a ganache, which is heated cream mixed with the sweetened cocoa bar. The hot cream melts the solid bar pieces. Then stir the mixture until it is smooth and you have the wonderful beginnings of a truffle. At this point, many types of liqueurs are often added. Other popular additions include dried fruit, nuts, caramel, mint, peanut butter and the list goes on.

Let the cream and cocoa sit for about an hour then mix it until smooth. It should be thick enough to roll into balls at this point. You don't want a perfect looking sphere, especially if you have added other ingredients to it. They are meant to mimic an unearthed fungus, so they should be 'natural' looking.

This treat is named for the truffle fungus that grows beneath the surface of the ground. It is difficult to find and harvest yet, is a sought after ingredient in gourmet restaurants around the globe. When unearthed, this fungus resembles a dark, dense, oddly shaped ball covered in dirt. The sweet treat is often coated in cocoa powder as a final indication to the fungus.

It is very easy to make this dessert, as very few ingredients are used. However, you must start with high quality sweetened solid cocoa or your treat will not be as good. Many European and Belgium makers create renowned cocoa and are exported to many countries around the world. So, finding great cocoa should be fairly easy to do.

To create this dessert, just heat cream to a simmer and pour over evenly chopped pieces and let it sit for 5-10 minutes. Then stir it up until smooth. Once it has almost completely cooled, then you can roll them by hand and coat them as you wish. Get creative and give your dark chocolate truffles away as gifts. Just remember to keep a few for yourself.
