Mexican foodies love to say that authentic Mexican food like this one for easy quesadillas make it hard to imagine Mexican appetizers getting any more simple and easy to make. The quesadilla is really Mexico's take on the American favorite: grilled cheese sandwiches-- only we're substituting corn tortillas in place of the bread, in order to bind our sandwich!
Quesadillas are perhaps most commonly thought of as a quick snack to whip up, or even a fast supper if you just make a few extra and you're in a lazy mood, when you're feeling exhausted and you're not up for making anything long and involved. Here it is:
Cooking Time: about fifteen minutes
Ingredients you'll need for this (serves four people):
-some kind of Mexican salsa, like salsa bandera, or a guacamole--something to give your quesadillas a bit more flavor -roughly 200g of manchego cheese -8 tortillas (corn, not flour)
How to make them:
Start the whole thing by heating up a cast iron pan on the stove if you have one (otherwise a regular pan will do.
Take your cheese and cut it into 8 evenly sized pieces.
Now prepare your favorite salsa (I've recommended a few above, in the ingredients list).
Warm up the tortillas one at a time, and as each is starting to heat up, add a bit of manchego cheese to it, then fold the whole thing in half so that it looks like a semi-circle cheese sandwich...thingy, and then allow it to heat up until all the cheese inside of it has melted.
When each is ready, remove it from your pan to a plate and then dress with whatever salsa you chose to make. and then enjoy your tasty creation: by far of the most easy Mexican recipes from the entire real Mexican appetizers side of the Mexican foodscape.
Mexican quesadillas are insanely easy to cook and they're perfect when served as a fast snack you can make in a pinch, great for serving to your unexpected dinner guests who managed to pop by without an invitation or for making for little kids as a little three o'clock snack if they're into Mexican food and would like authentic Mexican recipe appetizers. So until the next recipe, keep trying new things with the food you eat, keep enjoying new and varied Mexican food, and enjoy your quesadillas and other Mexican appetizers! Provecho!
