Chicken and Ham Casserole

I love chicken, and I love ham, so guess what, I love this recipe! This is a great, healthy, and easy to following chicken breast recipe that includes ham. Hearty and filling, a winner every time!

Serves 4, ready within 90 minutes.

Ingredients

4 chicken breasts, 250g cooked ham, Olive oil, 300ml red wine, 1 red pepper, 1 green pepper, 4 celery stalks, 2 garlic cloves, 1 leek, 1 tsp paprika, 400g can of chopped tomatoes, 1 tbsp tomato pure, 2 sprigs fresh thyme, 2 tbsp fresh parsley, salt and pepper

1. Pre heat the oven to 160C.

2. Take your chicken and drizzle over a little olive oil. Rub in the oil with salt and pepper, wash your hands and place a casserole dish over a medium heat, adding a little oil to this too.

3. Add the chicken breasts to the dish and fry until cooked through and golden on both sides.

4. Once the chicken is thoroughly cooked remove from the casserole dish and put in a separate bowl for later.

5. If need be add some more oil to the casserole dish. Reduce the heat. Now wash and cut up the peppers and throw them into the dish. Cook these for around 3 minutes. Next is the leek and celery - wash thoroughly (especially the celery) and chop into quite large thick chunks. Add these to the dish too and then crush in the garlic cloves (I find leaving the skin on the garlic crushes them better). Mix together for another couple of minutes and then add the cooked ham.

6. Add a little paprika over the mixture and stir in well before adding the red wine.

7. Leave over the heat for another couple of minutes to really allow the food and wine to fuse together. Then add the chopped tomatoes, puree and thyme.

8. If you think it's needed add a little more salt and pepper to season and then add the chicken back to the contents of the casserole dish. Pour boiling water over the whole mixture and raise the temperature until it starts to boil. Then remove from the heat.

9. Place the lid over the casserole and place in the oven for an hour.

10. Serve piping hot with mash potato and a pinch of fresh parsley. Red wine goes very nicely with it too.

Also, this is freezable, so don't throw anything away if you can't finish it!
