Vegetarian Recipes: Find What You Need To Know

If you are looking for authentic Indian taste, then you will love these delicious vegetarian recipes. These simple recipes involve copious use of vegetables. You can start by preparing the sauce.

You will need a tablespoon of sunflower oil, 50 grams of finely chopped onions, 2 teaspoons of madras curry powder, a teaspoon of tomato puree, 1 bay leaf and a twist of pepper, salt and sugar to taste, juice of half lemon, 2 table spoons of apricot jam or Mango chutney, 150 ml red wine and 120 ml water.

The oil should be heated and the onions added into it and stir well until it turns golden brown. Next you should add curry powder, tomato puree to it and left it to cook for few minutes. Once cooked, mix the other ingredients and put it on simmer for 10 to 15 minutes. After cooking is complete, strain and cool.

An ideal dish to serve this with is apple and celery salad. All this needs is 2 granny smith apples, 4 celery sticks, 1 tablespoon of plump sultanas, a squeeze of lemon juice and 150ml of double cream.

Peel and cut apples like match sticks. Cut celery sticks in the same way. Mix apples, celery sticks and lime juice in a bowl and refrigerate it for half an hour. Add double cream and the sauce made earlier before serving.

Another great use of the sauce is to add it to cauliflower cheese dish. The ingredients are simple; 1 cauliflower cut into florets, 30g of butter, half a teaspoon of cumin seeds, 1 pinch of chili powder, 300ml of milk, 50g of plain flour, 1 teaspoon of English mustard, 125g of grated cheddar cheese and 1 finely chopped green chili.

Boil the florets for 5 minutes and drain them. Pre heat the oven to 180C. Melt the butter in a pan and splutter the cumin seeds, add the chili powder and flour. Slowly add milk to avoid lumps. Whisk this mixture thoroughly and let it cook on low fame to form a smooth paste.

Now add the cheese, the English mustard and the curry sauce which was made earlier. Pour little amount of this mixture in the oven proof dish. Now add the florets and spread the rest of the sauce over the florets; coating them completely. Garnish with cheese. Let this mixture bake it the oven till it turns brown. Serve immediately.
