BBQ Salmon: The Quick And Easy Way

Lemon Herbed BBQ Salmon

Components

-1/3 cup of olive oil

-2 grated garlic cloves

- 2 lemons, juiced

-2 tablespoons of chopped capers

- cup of dill leaves that have been finely sliced

-3 sprigs of thyme

-1 lemon cut into 8 even wedges

-10 6oz fillets of Atlantic salmon

Mix the first 6 ingredients in a large bowl. The olive oil doesn't mix easily with other ingredients, so you have to give it a good mix. This mixture is called a vinaigrette, it can be used in salads and as a dipping sauce. Put fillets and marinade in a big zip-lock and refrigerate for an hour turning occasionally.

Set the grill to medium high heat. The salmon must first hit the grill with the skinned side up, leave it to cook for around 4 minutes then turn and cook for 6-7 minutes more. A toothpick can tell the difference between a raw and a cooked fish. Look for the thickest part of the fish and insert the toothpick as far as it can go. If it penetrates the fish smoothly, meaning you don't feel any resistance it means that the fish is cooked. If the fish seems to resist the toothpick, it's not yet cooked. If you can feel even the slightest of resistance, it means that the fish is not yet done.
