Making Bread

By Petrusia Kowal

Just about everyone in the country has a bread maker somewhere in their kitchen, usually hiding in a cabinet somewhere and being used as a dust collector. Dust off that bread maker, because soon you'll be making healthy and delicious foods with ease! A bread maker can be used to make more than just run-of-the-mill white bread. While white bread made in a bread maker at home is more healthy for you and your family, there are other types of breads that are just as easy to make, taste fantastic, and offer many health benefits that plain white bread cannot.

One of my family's favorite bread maker recipes is oatmeal bread. While it incorporates standard bread flour into the recipe, it also contains soy flour and soy milk as well as the health benefits of oatmeal. Oatmeal bread is an easy and tasty way to help your family get their daily recommended intake of fiber without the notorious "cardboard" flavor. Vanilla flavored soy milk is a wonderful substitute for plain soy milk and provides a little hint of flavor to the finished loaf as well. Oatmeal bread can be used to make sandwiches or it can be served alongside your favorite meal. This is my family's standard bread for just about anything that white bread can do.

Another family favorite is toasted three grain bread. This bread is made using quinoa, flax seed, and oatmeal. It also contains honey and sesame seeds to provide a unique but hearty flavor. Our family enjoys the bread toasted due to the flavor it lends to the sesame seeds. Once toasted, it can serve as a base for your favorite sandwich or be topped with reduced fat cream cheese, honey, or even hummus for a fantastic and flavor-filled snack. Because this bread is richer and more filling than the oatmeal bread, we generally reserve this bread for snacks or use it toasted for grilled chicken breast sandwiches or lean roast beef sandwiches. My children especially enjoy barbequed pork loin sandwiches atop this tasty bread.

For those of us with a bit of a sweet tooth, another great bread maker food is an apple cinnamon and granola bread. This is also very healthy and filled with fiber. We use whole wheat flour and a bit of white flour, applesauce, a favorite granola, brown sugar and cinnamon. This bread is best served warm and is a great treat for breakfast. Serve this with apple butter or honey butter and it's sure to be a hit! You can also be creative and make French toast from this bread as a special treat. In our family, this is one of the favorites for after-school snacks. We serve a slice of apple cinnamon and granola bread with a favorite flavor of low-fat or fat-free yogurt for an extra boost of fiber and protein. Reduced fat apple cinnamon cream cheese is another ideal topping for this bread.

Your bread maker shouldn't be in a cabinet or storage area taking up space. We've given three great ideas for making bread that we're sure you and your family will love. Have fun with finding new ways to use these breads and take satisfaction in knowing that you're giving your family a healthy treat!
