Greek Island Style Chicken Livers with Fried Eggplant

Many people are starting to be more and more aware of and concerned with their well-being. We're all beginning to consume as many items that are high in vitamins and minerals needed within our bodies each day. Vitamin b7, popularly referred to as biotin, is a vitamin we need to have daily to help provide us with heaps of energy.

This Greek chicken liver meal is sure to not only load you up with your needed volumes of vitamin b7 and other critical vitamins and minerals, but promises to take your taste buds on a tantalizing vacation to the Greek Isles without need to leave your own home.

INGREDIENTS

1 lb of eggplant, sliced just about inch in width

5 tbsp of flour

1 teaspoon of salt

2 tbsp of vegetable oil (any type of oil may be substituted)

4 tbsp (half a stick) of butter

1 pounds of chicken liver, washed and cut

1 medium-sized onion, sliced teaspoon of crushed basil leaf

1 can of chicken broth, condensed 2 tomatoes, ripe, peeled then diced

2 tbsp of chopped parsley

PREPARING THE MEAL

Mix 3 tbsp of salt and flour Coat the eggplant with this mix and set onto a plate

On a large pan, combine oil and 2 tbsp of butter and saute the eggplant for just about three minutes or until the proper "doneness" of the eggplant is reached

Take a serving dishes and place the pan-fried eggplant pieces with overlapping skin parts

Set aside without allowing to cool very much

In same pan, add what's left of the butter and saute the onions and liver until browned and cooked.

This should take around six minutes to cook.

Add remaining flour and spray chopped basil leaf

Add in chicken broth and continue cooking

Keep over medium heat until your mixture thickens. This will take just about 1 minute

Add tomatoes and cover pan

Lower heat and allow it simmer for about 5 minutes

When serving, place the mix in the center of the arranged eggplant and your family is now ready to sit and eat.
