Kalakand is a toothsome melt in the mouth sweet that's simple to knock-up and absolutely loved by both adults and kids. The Diwali 2011Event is sure to be a fantastic time to create and share treats. Here are three (3) slightly different recipes for preparing Kalakand. The absolute maximum required time for preparing Kalakand is 40 minutes and the entire process usually doesn't have any pre-preparation.

Traditional:
Ingredients
- 10 cups full fat milk
- 1/4 table spoon Alum powder. You can also use citric acid (1/2 tsp.) completely dissolved in water. The purpose of both is for crystallisation.
- 4 large spoons of sugar
- 1/4 table spoon Ghee (clarified butter) for greasing
Methodology
- Pour milk in a thick-bottomed aluminium pan and heat on low flame.
- Keep on stirring so that it does not stick to the bottom.

- Keep on stirring so that it does not stick to the bottom.
- When the milk starts to thicken a little (i.e. Decreases to 3/4th of the quantity) add the alum powder to it. You'll see that it will begin to thicken.
- Keep stirring till milk becomes grainy and then reduces to a solid mass. Keep the flame on low for even cooking.
- Add sugar and mix well. You may add sugar-free to the mix for the diet conscious.
- Keep on stirring the mixture for 5 to 10 minutes more until it thickens again.
- Grease an aluminium tray with ghee.
- Pour the mixture into the tray and spread evenly.
- Let it set in a cool, dry place for one or two hours. When the mix is set cut it into square shapes and serve.
Express with Cottage Cheese:
Ingredients
- 1 can sweetened condensed milk
- 250 grams fresh paneer (cottage cheese)
- A touch of saffron
- 1 tablespoon cardamom powder
- 8 nos. Pistachio nuts
System
- Mix all the ingredients in a microwave proof glass bowl.
- Microwave on high for 15 minutes.
- Each 3 minutes stop, stir and restart.
- Pour the mix on a greased aluminum tray and let it set for a few hours in a cool area.
- Once set, cut into squares to serve.
Express:
Ingredients
- 1 tin of sweetened condensed milk
- 1 spoon yoghurt
- 1/2 large spoon ghee for greasing
- 1 spoon cardamom powder for flavour
Methodology
1. In a deep glass microwave proof bowl, add all the ingredients apart from ghee.
2. Microwave on high for 9 minutes.
3. After every 2 minutes, take out the bowl stir the ingredients and microwave again for 2 minutes.
4. Let it stand for three minutes.
5. Pour onto a greased aluminum tray and let it set for a couple of hours.
6. Cut into square and serve.
