Tasty And Healthy Vegan Pizza

For those of you who haven't had a vegan pizza recipe without cheese, it's not as scary as you might think. All the other factors are still there - a soft homemade dough, a flavorful sauce and some delicious toppings. Play around with pizza toppings to create your own healthy vegan recipes.

Prep Time: 30 min. Cooking time: 30 min. Time from start to eating: 1 hour. Makes enough for 2 medium pizzas.

Healthy Vegan Pizza Recipe Ingredients:

Pizza Dough:

1 cup whole grain flour

1 Tbsp yeast

1 tsp salt

2 tsp olive oil

1 cup water

BBQ Sauce (see below)

Toppings:

Tempeh, cubed

Red pepper, diced

Tomatoes, diced

Handful of spinach, chopped

1 tsp olive oil, or less

pinch of sea salt

Healthy Vegan Pizza Recipe Directions:

1. For the dough, combine the flour, salt and yeast in a bowl. Make a well in the center of the flour mixture and add the oil, then the water. Bring the dough together. Add water or flour as required to make a soft dough. Knead for at least 5 minutes, and then press or roll out into pizza-based shapes.

2. Sprinkle some coarsely ground millet or corn flour on a baking sheet, and put the crusts in the oven at 400 degrees F for 10 minutes, or until they start to get a light color.

3. If you don't time or fancy making a dough from scratch, you can make use of whole wheat pita breads.

4. Meanwhile, cut up the vegetables. Put them in a bowl and toss with a small amount of olive oil, and then salt. Take the pizza crusts out of the oven, top with the sauce, then the vegetables.

5. Place the pizzas back in the oven for about 20 minutes, or until the vegetables are soft.

Healthy Vegan BBQ Sauce Ingredients:

1 Tbsp olive oil

1 onion, chopped

2 garlic cloves, chopped

1/4 cup brown rice syrup or unrefined sugar

2 Tbsp molasses

1 small can tomato paste (5.5 oz)

1 cup apple cider vinegar

1/2 tsp ground coriander

1/2 tsp dry mustard powder

1/4 tsp ground cloves

1/4 tsp allspice

1/4 tsp ground cardamom

12 tsp sea salt

1 cup water, or as needed

Healthy Vegan BBQ Sauce Directions:

1. Heat the oil in a saucepan and saute the onion until it transparent, then add the garlic for a short saute.

2. Add the rest of the ingredients, adding water if you need to for your desired consistency.

3. Simmer and cook for 20 minutes. Let it cool, and then puree if you want, or just leave the onions whole.
