1 tsp of salt
one tbs sugar
1 tsp of baking powder
dash of red pepper or 1/4 tsp of Tabasco (if Tabasco, add to the wet materials in place of the dry ingredients)
3/4 cup lowfat milk
1 egg
a couple of tablespoons finely cut onion
Sift all the dry ingredients in to a non reactive bowl and place the bowl aside for later on. Inside different bowl, beat the egg after which add the milk. Pour the wet elements in the dry ingredients and blend well together just up until only minute lumps occur. Really do not over stir; or else the mix could possibly get "gummy". Add the onion and stir until just mixed. Drop spoonfuls directly into very hot oil (375 F) and fry in the hot oil until browned. If you like yours salty, then sprinkle with salt while the grease is still hot on the puppies.
Hush puppies do not keep well, so make sure they are eaten pretty quickly. Do not try to store them.
