Easiest cake recipe

The book called it an easy to cake recipe, but I've managed to do it all wrong! The butter came out hard, the batter was runny and the cake you made came out all sunken and burned beyond all recognition.

OK, first of all, don't be down beat - even accomplished bakers have cake malfunctions sometimes; and while we're on the subject, easy cake making for the home aren't always about the aesthetics at all. It's worth bearing in mind that a cake doesn't have to look aesthetically please for it to taste delicious. If you do make a mistake in creating your cake, there's no need to waste it either - retrieve any edible bits and freeze them bulk up a tirmaisu or trifle with them, and then let your dog eat the rest.

Dropping consistency. This simply means, if you scoop up the batter tip the spoon as you go to pour it out, and you'll find the mixture to drop off slowly. Don't panic if the batter doesn't move. Try thinning it by using a few drops of milk. If on the other hand it's to runny All you need to do is sift with flour.

Testing your easy cake recipe for being done Do not presume the cooking times from the recipe are accurate. Keeping checking from 10 - 15 minutes before the end by probing the centre of the cake with a knife, proceeding well inside the mixture.
